Butterscotch Cream Pie

I thought it might be fun to add a great recipe that my family uses for special occassions. We call it the Kennedy Cream Pie, but it's really Butterscotch Cream Pie! It's fantastic anytime so enjoy this recipe!
Butterscotch Cream Pie
2 cups milk (homo)
1/3 cup all-purpose flour
1 cup brown sugar
1/4 tsp. salt
3 egg yolks
3 tbsp. melted butter
1/2 tsp.vanilla extract
Meringue Topping
3 egg whites
1/8 tsp. cream of tartar
1 tablespoon confectioners' sugar
2 cups milk (homo)

Meringue Topping
3 egg whites
1/8 tsp. cream of tartar
1 tablespoon confectioners' sugar
1 - 9-inch unbaked pie crust
1. Preheat oven to 375 F. Brush pie crust lightly with egg white to seal. Bake for 10 mins. or until light brown and crisp.
2. In a small bowl, mix together flour, brown sugar and salt.
3. In top of double boiler over medium heat, scald milk while stirring with whisk. Whisk in flour mixture. Cook, stirring constantly until thickened; remove from heat.
4. Place egg yolks in medium bowl. Stir in 1/3 of the milk mixture to temper the yolks. Then pour yolk mixture back into remainder of milk mixture in pan. Return to stove and cook, stirring constantly until thick. Remove from heat and stir in melted butter and vanilla. Pour into baked pie crust.
5. In a glass or metal mixing bowl, beat egg whites, cream of tartar and confectioners' sugar until stiff peaks form. Spread meringue over pie, covering completely.
6. Bake at 350 F for 10 to 15 minutes until meringue is golden brown.
